Uses: Mainly used in Oaxaca and the Yucatan Peninsula where my grand mother was born,its made from thousands of slightly bitter and zesty, earthy flavored annatto seeds ground into a paste. Adds color and a distict flavor to rice,corn dough,meat,pork, chicken,soups.
